The Foodist: Sausage, Thunder Jack Cheese, and Mango Scrambled Eggs

INGREDIENTS
Five Fresh Eggs (ours came right from the coop!)
1 roasted mango from a jar
1 cup thunder jack cheese
1/2 kielbasa (or Jackfruit for vegetarian option)
1 cup spinach
1 green onion chopped
1 handful of parsley chopped
1 Tbsp ghee
1 Tbsp duck fat
Salt and pepper to taste
DIRECTIONS
Crack and Whip eggs in a glass bowl, and prep veggies and mango by slicing and set aside.
Grate the thunder jack cheese (it’s best fresh grated)
In a hot pan, brown the sausage or Jack fruit until you achieve a good Maillard reaction. Set aside, and drain oil and secure.
Add the ghee and the duck fat into the hot pan. Add the fruit and veggies and let them heat up.
Add the sausage or jackfruit and stir it together. Then add the eggs. gently scramble the eggs to the side, then mix everything together once they start to set.
Add the cheese and stir it in. Serve hot with toast and jam!
